Sproutslaw
I love homemade coleslaw...so much better than the shop bought kind but sometimes the mayo can be a bit heavy, here is a recipe that is light and deliciously scrummy and...it uses brussel sprouts, although you could use cabbage instead.
I sliced all the veggies on a mandolin but you could cut them finely with a knife.
Sproutslaw
Handful of brussel sprouts, finely sliced
One carrot, peeled, finely sliced
Half a white or red onion, finely sliced
One small courgette, quartered and finely sliced
1 tablespoon mayonnaise
1 tablespoon cider vinegar
1 teaspoon wholegrain mustard
Salt & pepper
Once you have sliced all the vegetables pop them in a bowl.
Mix the mayo, vinegar, mustard, salt and pepper together and mix then pour over the veggies and stir.
You could also add in sliced red peppers and a pinch of chilli flakes.
