Chickpea Burgers


Yummy vegetarian chickpea burgers - yes I know it sounds hippy and 70's but they really are delicious!

Chickpea Burgers

1 tin of chickpeas (400g)
1 small onion, finely chopped (I blitzed it in the food processor)
75g fresh breadcrumbs
Handful mushrooms, finely chopped (or blitzed)
1 clove garlic, crushed
1 teaspoon paprika (smoked if preferred)
1/2 beaten egg
Salt & pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano

Finely chop the onion and the mushrooms or blitz them in a food processor and fry in a little oil along with the crushed garlic for a few minutes until the onion is soft.

Mash the chickpeas with a fork or blitz roughly in a food processor and season with salt and pepper.

In a bowl add all the ingredients together leaving the egg until last as you may only need a little of it to bind all the ingredients together.

Shape into burgers and fry in a pan with a little oil for about 5 minutes each side or you can pop them on a piece of baking parchment and chuck them in the oven for about 15 minutes.

They are even nicer if you top them with a slice of grilled goats cheese.
