Beef & Onion Stew
Really simple but tasty slow cook stew.
Beef & Onion Stew
1 1/2lbs stewing beef, cubed
Two tablespoons plain flour, seasoned
Splash of olive oil
3 onions, sliced
1 garlic clove, crushed
1 pint beef stock
2 tablespoons cider vinegar
1 tablespoon tomato paste
1 bay leaf
Salt & pepper
1/2 teaspoon dried thyme
Coat the beef in the seasoned flour and fry in the olive oil for a couple of minutes to brown, then add the sliced onions and garlic, saute for about 5 minutes.
Add the stock, vinegar, tomato paste, herbs and seasoning.
Cover and simmer for two hours or until the meat is tender.
