Celeriac and Apple Soup
If you haven't tried celeriac yet and you like celery you will love it :-)
This is a lovely warm soup and healthy too.
Ingredients:
1 medium onion, chopped
Tablespoon olive oil
1 1/2 pints vegetable stock (I make my stock using vegetable bouillon powder)
250g (about half a standard size celeriac) cut into small cubes
1 medium apple, peeled, cored and cut into quarters. If you use a cooking apple it will mush up better than and eater.
Salt & pepper
3 carrots, chopped
Fry the onions in the oil for a couple of minutes until soft then add the stock, celeriac and carrots, simmer for 20 minutes.
Add the chopped apple and simmer for a further 5 minutes.
Season to taste with the salt & pepper.
You can either liquidise the soup now or leave it as it is.
