Chocolate Traybake

This is so easy and quick to make but tastes delicious.  I usually don't bother to ice it but you could top it with butter cream or melted chocolate if you wanted to.

Chocolate Traybake



4 level tablespoons cocoa powder
4 tablespoons hot water
225g (8oz) butter, softened
225g (8oz) sugar
275g (10oz) self raising flour
2 level teaspoons baking powder
4 large eggs
4 tablespoons milk

30 x 23cm (12 x 9 inch) baking tin

Preheat the oven to 180FC/gas 4.  Grease and line the base of a baking tin.

Blend the cocoa powder with the hot water and allow to cool slightly.

Pop all the ingredients into a bowl and mix until well blended.  Spoon into the prepared tin and level the surface.

Bake for 35-40 minutes or until the cake has shrunk from the sides and springs back when pressed lightly in the centre with your fingertips.

Leave to cool in the tin.
