These are yum!
Chickpea & Peanut Veggie Burgers
1 can chickpeas, drained and mashed
1/2 onion, finely chopped
1 small courgette (zuchinni), grated
1 teaspoon dried coriander (cilantro)
3 tablespoons cider vinegar
2 tablespoons peanut butter
1 teaspoon cumin
1 teaspoon garlic powder
2 teaspoons black pepper
1/2 teaspoon salt
1 cup quick porridge oats
2 tablespoons olive oil
Mash the chick peas with a fork then add in all the other ingredients, mix well.
Form into 6-8 patties.
Fry in a lightly oiled pan for about 5 minutes each side or pop in a lightly oiled roasting tin in the oven (200C/Gas 6) for about 20 minutes.
