Kitchen Witch Gadget - Mandolin & quick pickled onions


One of my Yule presents was a mandolin - the fruit and vegetable slicer variety not the stringed instrument...

And I have used it every day...no fruit or vegetable in our house is safe...everything gets sliced...

It is so quick for slicing onions but I've also tried it with cucumber, apples, courgette, carrots, cabbage and even butternut squash!

It makes brilliant thin slices of cabbage for coleslaw and wafer thin slices of onion for quick pickled onion.

The model I have is the Oxo Good Grips Hand Held Mandoline Slicer and I particularly like the thickness adjustment you get with this model.

Don't forget to use the hand shield though...because those blades are extremely sharp.

Quick pickled onion

Finely slice an onion (red or white)
Whisk together 1/2 cup of cider vinegar with a teaspoon of sugar and a pinch of salt.
Pour the vinegar mix over the sliced onions
Let it sit for about an hour and it's ready.

This will keep in the fridge for a week or so.
