Chicken Strips

Chicken Strips


Soooo much better than the scary chicken nuggets you find in fast food joints or the frozen isle of the supermarket...

2 eggs
100g  (about 1 cup) breadcrumbs
1 teaspoon English mustard powder
Teaspoon dried parsley
1/2 teaspoon dried thyme
1/2 teaspoon cayenne pepper
4 skinless boneless chicken breasts
Salt & pepper

Preheat the oven to 220C/440F/Gas 6.

Lightly grease a baking tray.

Crack the eggs into a large shallow dish and give them a mix.
Put the breadcrumbs, mustard powder and herbs in a seperate dish, season with salt and pepper and give them a stir.

Cut each chicken breast into strips then dip each one first into the egg and then into the breadcrumb mixture, rolling it around until it is completely covered in breadcrumbs.

Pop each strip onto the baking tray.

Bake in the oven for about 12 minutes, turn the chicken pieces over halfway through the cooking time.
