Double chocolate American stack pancakes



Easy to make and yummy whether you have them warm with Greek yogurt...OK maybe ice cream...or cold spread with some butter.

3 cups plain (all purpose) flour
2 1/2 teaspoons baking powder
1 tablespoon cocoa powder (sifted)
1 tablespoon chocolate chips (or block chocolate chopped)
1 teaspoon salt
3 large eggs
3 cups milk
6 tablespoons butter
Butter to fry
1 tablespoon honey

Mix the flour, salt and baking powder in a bowl and add the chocolate chips.

In another bowl beat the eggs into the milk.

Melt the 6 tablespoons of butter in a saucepan with the honey, gently until all melted together.

Stir the liquid butter/honey into the milk and eggs.

Add the liquid to the flour mixture and whisk together until the batter is just smooth.

Leave the batter for half an hour.

Melt a teaspoon of butter in a frying pan and ladle on 1/4 cup of batter for each pancake.  (This mixture makes loads so you will need to do them in batches).  Cook for about 30 seconds until small bubbles form on the top of the panckae then turn it over and cook for 30 seconds on the other side.

This mixture makes about 24 pancakes.
