Banana Choc Chip Cookies

I get a bit bored with banana bread to use up over ripe bananas so this is a good alternative, the measurements are in US cups because that's what I prefer to use, it is so much easier than weighing out all the ingredients, if you are in the UK I encourage you to purchase a set of measuring cups, the pound shops usually stock them.


Banana Choc Chip Cookies

1 1/2 cups plain (all purpose) flour
1 cup sugar
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
3/4 cup margarine or softened butter
1 egg
1 cup mashed banana (about 2 bananas)
1 3/4 cups porridge oats (medium or fine, not the large ones)
1 cup chocolate chips (I use whatever is going spare - flakes, twirls, chocolate buttons etc chopped up)

Preheat the oven to gas mark 5 (375 degrees).
Mix together the flour, sugar, salt, baking powder, cinnamon and nutmeg.
Beat in the butter until the mixture is crumbly.
Add the egg, mashed banana and the oats and mix together.
Then stir in the chocolate chips.
Spoon dollops onto a greased baking sheet and slightly flatten them with the back of a spoon (you will get about 30 cookies)
Bake for about 12-15 minutes.
