Tomato and basil pasta sauce



Easy peasey lemon squeezy...

Tomato and basil pasta sauce

Glug of olive oil
1 large onion, chopped
1 courgette, chopped
1 red or orange bell pepper, chopped
2 garlic cloves, crushed
3 x 400g tins of chopped tomatoes
1/4 teaspoon dried chilli flakes
2 teaspoons balsamic vinegar
2 teaspoons sugar
1 handful fresh basil leaves, torn into small pieces
Salt and pepper

Saute the onions and the garlic for a few minutes then add the chopped courgette and bell pepper, continue to sauté for another 5 minutes.

Then add the tinned tomatoes, chilli flakes, vinegar and sugar, leave to simmer on a low heat for about 40 minutes, stirring occasionally.

Just before serving stir in the basil and season with salt and pepper.

Serve over pasta shells or spaghetti.
