Chocolate Truffle Cookie/Muffin


Made this recipe for the first time today, didn't quite go as planned but the result was still good!

I don't use cooking chocolate as a rule and I didn't have chocolate chips so I used 270g chocolate buttons.

100g cooking chocolate, chopped
170g chocolate chips
85g butter
3 eggs
200g caster sugar (I used granulated)
1 1/2 teaspoons vanilla extract
60g plain flour
2 tablespoons cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt

Optional:
170g chocolate chips (I didn't have enough so didn't add these and they turned out fine)


Melt the cooking chocolate and the first 170g of chocolate chips with the butter in the microwave (or in a bowl over a pan of hot water) until smooth, set aside to cool slightly.

Whisk the eggs and sugar together until thick and pale (couple of minutes).  Stir in the vanilla extract and the chocolate mixture.

Combine the flour, cocoa, baking powder and salt, gradually stir into the chocolate mixture.

If using, fold in the remaining 170g chocolate chips.

Cover the mixture and chill for at least an hour, or overnight.

Preheat the oven to 180C/Gas 4.

Roll chilled dough into 2.5cm balls.  Place on ungreased baking trays about 5cm apart.

Bake for 9 to 11 minutes.

Allow to cool on the baking tray for about 5 minutes before removing.


Note: Being impatient I didn't leave the mixture to chill, I spooned it into muffin cases and baked in the oven for about 25/30 minutes - what I got was lovely soft chocolate muffins with a yummy chewy layer on the top.  Would definitely make again and hopefully be patient enough to leave to chill to make cookies!
