Caramalised Onion & Feta Tart


Had lots of onions...what to make?

Caramalised Onion & Feta Tart

This has got to be one of the easiest tarts to make!

Packet of ready roll puff pastry (I make my own shortcrust pastry but not puff pastry, it is too much faffing about!)
4 onions sliced
Teaspoon of sugar
Olive oil
3/4 packet of feta cheese
Teaspoon dried thyme
Salt & pepper

Saute the onions in a pan with a glug of olive oil and the sugar, slowly over a low heat, it will take about 20 minutes until they are a golden caramalised colour.

Roll out the pastry and place it on a baking sheet, score with a sharp knife around the edge, about 1" in to make a 'frame'.

Bake the pastry in the oven (gas mark 5) for about 10 minutes, then remove and lay the onions over the inner section of the pastry, sprinkle the thyme and salt and pepper over the top of the onions.

Crumble the feta and sprinkle that over the top of the onions too.

Bake in the oven for about 20/25 minutes.

The outer 'frame' of the pastry should rise up to surround the onion and cheese filling.
